Cuvée La Mercy-Dieu rosé
Designation
Sancerre rosé
Grape variety
Pinot noir
Area
2 hectares
Soil
This cuvée is made from a blend of parcels equally divided between Silex (50%) and Terres Blanches (50%) soils.
Vinification
The grapes are harvested by hand and carefully sorted. After gentle pneumatic pressing, the must is cold settled for 12 to 24 hours to clarify the juice and preserve its fruity aromas. Natural fermentation in temperature-controlled vats preserves the wine's freshness and elegance, producing a fine, aromatic rosé with a partridge-eye colour.
Features
The wine shows a pale pink colour with salmon highlights. The nose is expressive and fruity, combining red berries such as raspberry, strawberry, and redcurrant, with a delicate floral touch. On the palate, the cuvée reveals a lovely aromatic intensity, full of richness and freshness, supported by a crisp structure and a persistent finish.
