Located in the village of Bué, the Chêne Marchand parcel enjoys a south-east exposure, promoting optimal ripening of the grapes. This terroir, considered one of the finest Caillottes soils of the Sancerrois, lends the wine remarkable tension and great aromatic precision. aromatic.
Vinification
After being harvested by hand and rigorously sorted, the grapes are pressed using a pneumatic press. Cold settling precedes natural fermentation with indigenous yeasts, to preserve the identity of the terroir. The wine is aged for 12 months in 228-litre and 500-litre oak barrels. In order to respect the pure expression of Sauvignon Blanc without masking its aromas, a variable proportion of barrels is used depending on the vintage.
Features
The wine displays a bright pale yellow colour. The nose reveals a complex and refined bouquet, combining citrus notes with delicate hints of honeysuckle and a subtle toasted nuance. On the palate, the attack is fresh and intense, supported by lovely depth and texture. The oak ageing, discreet and perfectly integrated, enhances the typical aromas of the terroir without ever overpowering them.
