This cuvée is crafted from a blend of parcels located on the three emblematic soil types of the Sancerre appellation: Caillottes (limestone soils), Silex (flint), and Terres Blanches (clay-limestone).
Vinification
Hand-picked and carefully sorted, the grapes are then gently pneumatically pressed to extract the juice. The must is then cold-settled for 12 to 24 hours to promote the clarity and purity of the aromas. Natural fermentation then takes place in temperature-controlled vats, preserving the full expression of the terroir.
Finally, ageing on fine lees for several months brings added complexity and volume to the wine.
Features
The wine shows a pale yellow colour with light green highlights in its youth. The nose, complex and expressive, opens with notes of citrus and white flowers, delicately underscored by a mineral touch. On the palate, the attack is clean and fresh, giving way to a beautiful structure that combines liveliness with roundness. Generous and endowed with fine aromatic intensity, the wine unfolds into a long, persistent, and elegant finish.

This white wine pairs beautifully with Crottin de Chavignol goat cheese, grilled fish, seafood and shellfish, as well as creamy poultry dishes or lightly spiced cuisine.
Ageing potential
Our Sancerre Blanc "La Mercy-Dieu" reaches its full potential 6 to 12 months after harvesting and will give you pleasure throughout its ageing period, which can vary from 3 to 6 years depending on the vintage and storage.
