This cuvée comes from a parcel located in the famous village of Chavignol. The terroir is composed of Kimmeridgian marl, also known as "terres blanches", which is rich in limestone.

Vinification

After careful hand-picking, the over-ripe grapes are transported to the cellar with the utmost care to preserve the integrity of the bunches.

Once they arrive, the grapes are gently pressed to extract a juice of great finesse. The juice is then left to cool for 24 hours, allowing the suspended particles to settle naturally to produce a clarified must. before fermentation. The juice is then poured into a 500-litre casks, where the alcoholic fermentation takes place, This helps to develop the aromatic complexity of the wine.

After maturing for a year, the wine is bottled, ready to express all the richness of its terroir and vintage.

Features

This cuvée has a luminous colour with golden highlights. The nose reveals complex aromas of candied fruit, apricot and honey, enhanced by delicate floral notes. On the palate, the attack is full and greedy, offering a perfect balance between sweetness and freshness. The long, elegant finish is remarkably long-lasting.

This mellow white wine goes perfectly with foie gras terrine or pan-fried, blue-veined cheeses (such as Roquefort and Bleu d'Auvergne) and yellow fruit tarts (apricots, peaches).

Ageing potential

Our "Pêché" cuvée reaches its fullness 2 years after harvesting and will give you pleasure throughout its ageing period, which can last from 10 to 15 years depending on storage.
