La Mercy-Dieu
Appellation : Sancerre rosé
Domaine Bailly-Reverdy
Area : 2 hectares
Grape variety : Pinot noir
Soil : 50% flinty soils 50% Marly soils
Vinification :
After hand picking and sorting the grapes a fist time in the vineyards, the wine making is the same as for the white wine. The pneumatic pressing and cold settling lasting between 12 and 24 hours take place before the natural fermentation in thermo-regulated tanks. That's the best way to obtain a very delicate rosé wine, with a partridge eye colour.
Characteristics :
Beautiful light ruby colour. Very nice nose with small red fruits : raspberry, strawberry, red currant. Very lively in the mouth. Powerful red fruit aromas, echoing the expressions perceived on the nose. A really pleasant and enjoyable wine, to be just like “biting into the grapes themselves”. Very nice finish. Definitely fresh and elegant. This rosé wine will perfectly go with summer salads, barbecued meats, pizzas, pasta...

Ageing Potential :
Our Sancerre Rosé will reach its peak from 12 to 24 months after the harvest.
