Grape Variety : Sauvignon Blanc

Soil :
A combination of different chalky-clayey soils (2/3 Marly soils and 1/3 Pebbly limestone). The vines are planted on steep slopes, that's why in most cases, the work to be done in the vineyards is very difficult.

Vinification :
After hand-picking and sorting the grapes in the vineyards, they are transferred to the cellar with great care in order to avoid bruising the skins. The pneumatic pressing and cold settling lasting from 12 to 24 hours take place before the natural fermentation in thermo-regulated tanks. This vinification method gives the wine its typicity and respects the terroir.

Characteristics :

Very nice bright and clear colour, pale yellow with pale green highligts. A lovely open nose, expressive on citrus notes : lemon, grapefruit. It's very fresh in the mouth, you can taste the citrus notes with a hint of minerality. Lovely balanced and delicate. It will be ideal to accompany seafood, grilled fish, and fresh goat cheese.

Ageing potential :
Our white Sancerre wine “Chavignol”, will reach its fullest potential from 6 to 12 months after the harvest and you'll enjoy it all through the ageing. It will keep from 3 to 6 years. It depends on the vintage and the storage.
